300 g BIO mushrooms, brown - sliced thin
150 g creme fraiche or BIO cream
40 g organic butter
2 onions, medium in size (about 130 g total) - very finely diced
1 liter BIO vegetable broth
2 tablespoons organic parsley, fresh - chopped
1 splash of organic lemon
1 tbsp flour
1 teaspoon curry, mild - a little more to taste
Salt and pepper - to taste
MANUAL

First clean the mushrooms and cut into thin slices and the onions into very fine cubes
Then heat the butter and add the mushrooms first, then add the onions, sprinkle with 1 tablespoon of flour and toast for 5-8 minutes over high heat
Season with 1 teaspoon curry and let it roast briefly, so that the aroma of the curry unfolds nicely
Then you clear with the vegetable broth, let the soup boil, seasons it very strong with salt and pepper and simmer for about 5 minutes
At the end add creme fraiche or cream, chopped parsley and a dash of lemon until everything mixes nicely. Season again with salt, pepper and curry
TIP: Of course you can also puree the soup. But it is easier and faster if you serve them in this rustic version
